一部かもしれませんが、一応使えるコマンド音声(?)があります。
ちなみに、iPhone純正や、iPod用のマイク付きインイヤーヘッドセットの中央ボタンを長押ししても、音声コントロールが発生します。あとは、Blutoothヘッドセットから、音声コントロールを発生させられると良いのですが…。

Call someone in contacts
　Say “call” or “dial,” then say the name of the person. If the person has more than one phone number, you can add “home” or “mobile,” for example.

連絡先に載っている相手に電話をかける：
　「電話」または「電話をかける」と言った後に、相手の名前を言います。相手が複数の番号を持っている場合は、「自宅」や「携帯」などを追加できます。
　例：John Appleseed、電話

　　　John Appleseed、携帯、電話
Dial a number
　Say “call” or “dial,” then say the number.
番号を入力して電話をかける
　「電話」または「電話をかける」と言った後に、番号を言います。
Make a correction
　Say “wrong,”“not that one,”“not that,”“no,” or “nope.”
修正する
　「違う」、「間違った」、「間違い」、または「これじゃない」と言います。
Control music playback
　Say “play,” or “play music.”To pause, say “pause,” or “pause music.”You can also say “next song” or “previous song.”
音楽再生を操作する
　「再生」または「音楽を再生」と言います。一時停止するときは、「一時停止」または「音楽を一時停止」といいます。「次の曲」または「前の曲」と言うこともできます。
Play an album, artist, or playlist
　Say “play,” then say “album,”“artist,” or “playlist” and the name.
アルバム、アーティスト、またはプレイリストを再生する
　「再生」と言った後に、「アルバム」、「アーチスト」、または「プレイリスト」と名前を言います。
Shuffle the current playlist
　Say “shuffle.”
現在のプレイリストをシャッフルする
　「シャフル」と言います。
Find out more about the currently playing song
　Say “what’s playing,”“what song is this,”“who sings this song,” or “who is this song by.”
現在再生中の曲の詳細を検索する
　「曲名は？」、「この曲の名前は？」、「誰の曲？」、または「歌っているのは誰？」と言います。
Use Genius to play similar songs
　Say “Genius,”“play more like this,” or “play more songs like this.”
Geniusを使用して似ている曲を再生する
　「ジーニアス」、「似ている曲を再生」、または「同じような曲を再生」と言います。
Cancel Voice Control
　Say “cancel.”
